Naturally Sweetened Magic Bean Cake

This has been a huge hit everywhere I’ve taken it, this is the original version 

Frilly Pants over at real failsafe meals uses this cake all the time too, we both realised this could easily be made into a low salicylate cake by substituting cacoa powder for carob powder!

People absolutely ADORE how moist and delicious this cake is and nearly die of shock when they hear the main ingredient is kidney beans lol!

So here’s the recipe, it is a bit up in the air as to whether xylitol is failsafe, if you are worried just use normal brown sugar but if you want it sugar free use the xylitol and a few drops of stevia is an optional as well as some rapadura 🙂

420 g kidney beans, canned drained
1 tablespoon water
1 tablespoon vanilla extract (the pure stuff, I plan to make my own using vanilla beans and a jar full of vodka, should work quite well)
70 g unsweetened carob powder (RAW CACAO is amazing if you tolerate sals instead)
1 teaspoon GF baking powder (I get mine from Flannery’s)
1/2 teaspoon bicarbonate of soda
1/4 teaspoon salt
125 g Butter (I make my own from raw organic pasture fed cream in the thermomix)
5 eggs
90g xylitol or use around 40g xylitol and 100g rapadura if you want it sweet or just 180g rapadura- that’s what I normally use, otherwise you can use 180g brown sugar (failsafe low sals)

I have seen a document by a biomed practitioner that said xylitol should be ok to use and I haven’t noticed any adverse reactions but if you are extremely intolerant might be best to stick with sugar

In your Thermomix puree the beans, water, 1 egg and pure vanilla essence  until smooth on speed 7, open lid and scrape any down the sides and give it another little whiz. Set aside.

Beat the butter and xylitol and rapadura (or sugar if using) on speed 5 for 30 seconds

Add the remaining eggs & beat for 20 seconds on speed 4.

Add the bean mixture back in and blend on speed 4 for 5 seconds.

Add the carob powder, baking powder, baking soda, and salt and blend on speed 4 for 10 seconds.

Pour batter into greased ring tin pan and bake in the oven on moderate heat for 30 minutes (or until you can stick a toothpick in and it comes out clean) I find it best to bake for 30 mins and then put on fan force for 10 after this but my oven is rather useless!!

  • This sounds yummy…I would love to give it a go with xylitol need to work out conversion…..As my daughter not allowed any sugars..

    • I am currently in the process of experimenting wit xylitol etc, I will let you know how it turns out and post the new improved sugar free recipe when I have perfected it xx
